Boil the sweet potatoes for 15 minutes
Cut into wedges (after peeling)
Lightly brown the ground beef in a little oil
Add the tomato sauce, garlic, onion, and parsley
Let it simmer
Place the sweet potatoes in a baking dish and cover with the sauce
Sprinkle with grated Parmesan cheese
Bake in a moderate oven for 1 hour
