Peel the cooked potatoes and grate them coarsely
Melt butter or margarine in a frying pan and sauté the onions and garlic
Add the prosciutto and cook it lightly
Add the potato, parsley, thyme, salt, and pepper
Stir carefully and fry over low heat for 10 minutes, stirring occasionally with a spatula
Serve with fresh lettuce
