4 medium-sized potatoes, peeled and cut into rounds
For the sauce
4 tomato halves, seeds removed
2 cloves of garlic, coarsely chopped
1/4 cup olive oil
Salt to taste

Cook the potatoes in a steamer basket for about 10 minutes, or until they're tender
Prepare the sauce
Cook the tomato with the garlic, over low heat and covered, for 15 minutes
Blend the sauce with the olive oil
Season with salt and serve hot with the mashed potato
Makes 4 servings
Note: If desired, garnish with chopped green onions.
