4 medium-sized potatoes, peeled (500g)
1 quart of water
200g of smoked bacon, diced
200g of portuguese sausage, sliced into rounds
4 cloves of garlic, minced
5 medium tomatoes, cut into pieces
2 tablespoons of olive oil
1 onion, finely chopped
Salt to taste

Boil the potato with water in the microwave, on high power, for 10 minutes or until tender
Drain, squeeze out excess moisture and reserve
Spread the smoked bacon at the bottom of a baking dish, cover and bake in the same oven, on high power, for 5 minutes to melt and create fat
Add the portuguese sausage and bake for 3 minutes
Transfer everything to a serving tray
Combine the garlic with 3 tablespoons of the bacon's melted fat and microwave for 2 minutes or until lightly browned
Add the squeezed-out potato, mix well and reserve
In another container, place the tomato, olive oil, and onion
Cover and bake in the oven, on high power, for 5 minutes to soften the tomato
Combine with the potato mixture, season to taste
Top with portuguese sausage and smoked bacon, and serve after heating for 1 minute
