4 medium-sized potatoes, peeled (500g)
1 cup of water
200g of smoked bacon, diced
200g of Portuguese sausage, sliced
4 cloves of garlic, minced
5 medium-sized tomatoes, cut into pieces
2 tablespoons of olive oil
1 onion, finely chopped
To taste, salt

Bake the potato with water in a microwave, at high power, for 10 minutes or until it becomes soft
Drain, squeeze out excess liquid, and reserve
Spread the smoked bacon at the bottom of a baking dish, cover, and bake at the same power for 5 minutes to melt and create fat
Add the Portuguese sausage and bake for 3 minutes
Transfer everything to a serving dish
Mix together the garlic with 3 tablespoons of the bacon fat and microwave for 2 minutes or until it starts to brown
Add the squeezed-out potato, mix well, and reserve
In another container, combine the tomato, olive oil, and onion
Cover and bake at high power for 5 minutes or until the tomato becomes soft
Combine with the potato mixture and season to taste
Top with Portuguese sausage and smoked bacon, and serve after a minute of resting.
