Peel the sweet potato and cut into wedges
Arrange in a baking dish, in a single layer
Mix together the orange zest, gelato, and melted butter
Place in a hot oven (400°F) for about 20 minutes, flipping the wedges frequently to ensure they're well coated with the glaze
