6 ripe tomatoes, peeled and seeded, diced - 720 g
1 tablespoon of oregano

1 kg of cooked sweet potato, peeled and sliced
6 tablespoons of butter or margarine - 90 g

Heat the olive oil and add the garlic paste
Fry in low heat for 1 minute
Add the tomatoes, oregano, salt, and pepper
Cook slowly for 15 minutes
As it dries out, add 1 cup of water (240 ml)
Meanwhile, brown the sweet potato in butter or margarine
Add the tomato mixture and stir carefully
Check the seasoning and serve to accompany birds and fish
