6 sweet potatoes, peeled

2 tablespoons milk
2 tablespoons grated cheddar cheese
150g prosciutto, diced
1 egg, beaten

Pierce the skin of the sweet potatoes with a fork
Arrange them on a baking sheet and bake in a medium preheated oven until they're soft
Turn the sweet potatoes over during cooking time
Remove from the oven and cut them in half
Scrape out the pulp with a spoon and mash until smooth
Add the butter, milk, cheese, prosciutto, and salt
Return the filling to the sweet potatoes
Brush with egg and dust with grated cheddar cheese
Place in the oven at medium heat to gratinate.
