Makes a longitudinal incision in the potatoes, puncturing the skin at various points
Place them in a microwave-safe dish and cook on high for 10 minutes, or until they are tender
In another dish, warm the butter in the microwave for 30 seconds
Combine the garlic and chicken and return to the oven for 6 minutes
Mix halfway through
Season with salt and lime rind
Mix the sour cream with lime juice until thickened
Add to the chicken and fold in the parsley
Stuff into the potatoes.
