Bake the sweet potatoes with their skins, but not too soft
Cut a little hole in each one
Carefully scoop out the pulp
In a bowl, mix together the prosciutto, mayonnaise, cheddar cheese, and onion
Fill the sweet potatoes with this mixture, place them on a baking sheet, and sprinkle with Parmesan cheese
Put it in a hot oven (220°C) for about 35 minutes
Serve as a side dish with roasted meats
