Cook the potatoes with water and salt until they are soft, but not too mushy
Drain, let it cool, and split them in half lengthwise
Place 1 folded slice of ham and 1 of mozzarella on top of each potato
Close with the other half and secure with toothpicks
Dip the potatoes in egg and then in biscuit flour
In a hot skillet, heat some oil well and fry the potatoes on both sides until they are golden brown
Serve as an appetizer or accompanied by a green salad (for example, radicchio, arugula, lettuce etc.).
