Peel and chop the cooked and cooled sweet potatoes into half-centimeter thick slices
Next, heat a frying pan with a little bit of butter over low heat
When the butter has melted, add the sweet potato slices, gently shaking the pan from time to time and adding more butter as needed until the sweet potatoes are caramelized
In a separate pan, sauté finely chopped onions in a little bit of butter until they start to brown
When the onions have started to caramelize, add them to the sweet potatoes and let it cook for a few minutes longer, stirring occasionally to prevent the sweet potatoes from sticking to the bottom of the pan
Serve hot, garnished with chopped fresh cilantro
You can also add finely chopped chili peppers if you like.
