1 kg of small potatoes
1 cup of olive oil
1/2 cup of vinegar
1 large finely chopped onion
4 tablespoons of chopped fresh parsley
1 tablespoon of salt
1 tablespoon of ground black pepper

Cook the potatoes (with their skin), well washed, in water and salt, until they're tender but not mushy
Drain
Place them in a container that closes hermetically
Mix the seasonings well and pour over the potatoes
Store in the refrigerator for two days to allow it to mature.
