Beat the two eggs with two cups of sugar well whipped
Next, add the milk
Heat over medium heat until it's hot but not boiling
Don't let it boil
Remove from heat
While still warm, combine the gelatin sheets that have been softened in a little water
Mix until the gelatin is fully dissolved
Let it cool
The half ricotta must be passed through a fine-mesh sieve, mixed with three tablespoons of sugar and one cup of rum before being incorporated, well mixed, into the cream from earlier
