Mix the salt with the egg whites and beat until stiff peaks form
Add the confectioners' sugar 1 tablespoon at a time, beating well after each addition, until the sugar is fully dissolved
Add the vanilla extract and shredded coconut, mixing lightly
Pour the mixture onto greased or parchment-lined baking sheets in small mounds
Bake in a moderate oven for about 20 minutes
Place a sheet of wax paper over a damp surface
Allow to cool for 1 minute
Gently pry the kisses loose with a spatula
Allow to cool and place a halved candied cherry on top of each kiss.
