2 medium eggplants

2 medium tomatoes cut into slices

1 cup grated mozzarella cheese

Cut the eggplants into 3 cm thick slices, with or without skin
Arrange them on aluminum foil
Season with salt, black pepper, and oregano
On each eggplant slice, place an onion slice, followed by a tomato slice
Top with butter pieces
Close the aluminum foil tightly and place it on the grill for 30 minutes or until the eggplant is tender
When opening the aluminum foil, sprinkle each slice with grated mozzarella cheese
Serve in 4 portions.
