Boil the sweet potatoes in water until they are tender, about 40 minutes or when they reach desired doneness
Peel and slice them into 1-centimeter thick rounds
Arrange the slices on a baking dish with a little olive oil, some of the tomatoes, and a sprinkle of parsley
Place a bit of tomato on each round, followed by a sprinkle of salt and parsley
Drizzle the remaining olive oil over everything
Finally, top with crumbled goat cheese and bake in the oven for 15 minutes or until the cheese is melted and warm
Serve immediately as a side dish to meats or divide into individual plates and serve as an appetizer on cold days.
