Fry the onion in butter or margarine for about 10 minutes
Mix the egg with wheat for quibe in a small bowl
Add the onion and mix well
Add water and salt and bring to a boil, then reduce heat and simmer for 5 minutes
Remove from heat
Add creamy ricotta cheese and green corn and mix well
Pour into a buttered baking dish and bake in a moderate oven (170°F) for about 30 minutes or until firm
Remove from oven, sprinkle with grated cheddar cheese and return to oven until cheese melts
Garnish with tomato slices and serve
