Trim the ends of the artichokes
Remove the tough outer leaves, cut the artichokes in half, and scoop out the choke
Cut the lemons in half and rub them over the artichokes to prevent browning
Heat the olive oil in a pan over low heat, stirring constantly, and add the artichoke hearts
Add the thyme, white wine, and water, stir well, then season with salt and black pepper
Let it simmer for 30 minutes, stirring occasionally until all liquid has evaporated
Remove from heat, let it sit for 5 minutes, and serve
