Fry the bacon slices until crispy, drain and crumble them. Reserve
Add the green onion to the fat that has released from the bacon and fry until softened
Add the vinegar and mix well
Heat the water and salt in a pan until boiling
Add the zucchini and cook for 3 minutes only
Drain and arrange the zucchini on a warm platter
Dust with diced eggs, then with crumbled bacon, and drizzle with hot vinegar sauce
