1 eggplant peeled (or with skin)

3-4 tablespoons of mayonnaise
1 tablespoon finely chopped onion
3-4 tablespoons of breadcrumbs seasoned with oregano
1 tablespoon grated Parmesan cheese

Cut the eggplant into 4 long slices
Sprinkle both sides with salt and let it sit for 30 minutes
Dry the eggplant slices with paper towels
Mix the mayonnaise with onion and dip the eggplant in that mixture
Mix the breadcrumbs seasoned with oregano with Parmesan cheese and also coat the eggplant in that mixture
Arrange the slices on a baking dish and bake at moderate heat (170°F) for approximately 15 minutes, or until tender and soft.
