4 cups (loosely packed) of your preferred green leaves (lettuce, arugula, escarole)
3/4 cup (loosely packed) of water
2 tablespoons of mayonnaise
Sauce from 1 avocado
Skin from 1 avocado
1/2 cup (loosely packed) of fresh cheese cut into cubes
1 cup of cherry tomatoes, halved
Salt to taste

Wash the leaves well and arrange them on a plate, reserving
Put the avocado skin in a saucepan and add water
Simmer over low heat until the water has reduced by half
Cool and mix with the avocado sauce, adjusting the salt as needed
In a salad bowl, arrange the leaves, spreading the tomato halves and cheese cubes
Dress with the avocado dressing and serve immediately
