6 to 8 medium beetroots
2 spoons of butter or margarine
3/4 cup of water (or more if needed)
2 spoons of orange juice
1/2 tablespoon of grated orange peel
1 small cup of natural yogurt
6 to 8 medium beetroots

Peel the beetroot and cut it into thin slices
Melt the butter in a pan over high heat
Add the raw beetroot, sliced, and water
Cook, stirring occasionally, for about 10 minutes or until the beetroot is tender; add more water if needed
Add the grated orange peel and juice
Heat well
Add the yogurt and season with salt and black pepper to taste
Serving
