Two cups of cooked beetroot cut into slices
One medium onion, thinly sliced

Bring the vinegar and water to a boil
Add the mustard, salt, and sugar
Stir well and let it simmer again
Pour over the beetroot, onion, and ground ginger
Cover and refrigerate for one to two days or longer
Serve chilled
