Gently pound the beef
Mix together the olive oil, red wine, garlic, salt, and black pepper
Let the beef marinate in this mixture for 4 hours, moistening it frequently
Drain the beef and pat dry with paper towels
Mix together the flour and a pinch of seasonings to dissolve
Add the remaining seasonings
Heat over medium heat
Bring to a simmer and cook slowly, stirring constantly, for about 5 minutes
Melt butter or margarine in a skillet
Sear the beef fillets on both sides until they reach your desired level of doneness
Serve with the braising liquid
