4 tender beef rolls of 150g each

1-2 pickled peppers

2 teaspoons tomato paste

Thinly slice the beef and pound it with a meat mallet
Season to taste with salt and pepper
Spread a small amount of mustard over each beef roll
Cover with some slices of bacon and pickled peppers, making sure they cover the width of the beef roll
Chop the onions and fry them in vegetable oil
Place them on top of the beef rolls
Roll up the beef and secure it with kitchen twine or toothpicks
Fry all sides in a little oil
Dust with wheat flour
Mix tomato paste with beef broth, and add it to the beef rolls
Place the rolls in the oven until the beef is tender or cook over low heat, adding more broth as needed
Serve 4 portions.
