5 beef rolls
2 pairs of French parsley chopped into cubes
2 eggs
1/2 teaspoon ground nutmeg
1 tablespoon ground cinnamon
1 pinch of black pepper
1/2 teaspoon ground cardamom
Juice from 1/2 lemon
1/2 onion cut into rings
1 tablespoon olive oil
1/2 cup tomato sauce
1 bouquet garni
1 cup vegetable broth
1/2 cup all-purpose flour
Salt to taste

1/2 cup all-purpose flour
Salt to taste
Season the beef rolls with salt
In a separate bowl, mix together the parsley, eggs, nutmeg, cinnamon, black pepper, and cardamom juice
Spread this mixture evenly over each beef roll, roll them up tightly, and secure with kitchen twine
Heat the olive oil in a non-stick skillet and sear the beef rolls
Add the onion and cook for two minutes
Then add the tomato sauce, bouquet garni, and vegetable broth
Simmer until the meat is tender
If needed, add warm water
If the sauce becomes too thick, add more water
Transfer the beef rolls to a plate and remove any strings
Serve with the sauce.
