Combine the flour, yeast, salt, and sugar in a bowl
Make sure the butter is slightly softened
Add the butter in small pieces, mixing well after each addition
Add the eggs one at a time, mixing well with a wooden spoon
When all ingredients are well combined, refrigerate for 1 hour in the same bowl
Dust a surface with wheat flour
Roll out the dough to about 1/8 inch thickness with a rolling pin
Cut into circles with a cup and collect on a lightly floured surface
Place the cookie rounds onto an ungreased baking sheet
Sprinkle each cookie with a pinch of sugar and bake in a moderate oven for 12-15 minutes, or until golden around the edges
You will end up with approximately 40 shortbread cookies that everyone will find delicious.
