Pulse the flour, baking soda, and cinnamon in a bowl to combine
Set aside
Beat the butter, brown sugar, and granulated sugar in a separate bowl until creamy
Add the egg and beat well
Gradually add the dry ingredients and mix until just combined
Fold in the oats
Scoop the mixture into spoonfuls onto baking sheets lined with parchment paper, leaving about 7 cm between each biscuit
Bake in a moderate oven (300°F) for 15 minutes
