3/4 cup of butter or margarine
1 1/4 cups of sugar
1 egg
1/2 teaspoon of vanilla
1/2 teaspoon of lemon juice
1/4 cup of milk
2 cups of all-purpose flour
1/4 teaspoon of baking soda
1 teaspoon of salt
1 tablespoon of grated lemon zest
3/4 cup of butter or margarine
1 1/4 cups of sugar

Beat the butter or margarine with 3/4 cup of sugar until fluffy
Add the egg, vanilla, lemon juice, and milk
Beat well
Sift together the flour, baking soda, and salt
Gradually add the dry ingredients to the wet mixture, mixing well after each addition
Refrigerate until firm
Form into balls with 1 tablespoon each and coat in the remaining 1/2 cup of sugar mixed with grated lemon zest
Bake in a moderate oven (350°F) for 10 minutes or until lightly browned on the edges and slightly softened in the center
Let cool on a wire rack for about 25.
