Combine the all-purpose flour, baking soda, and spices
In a large bowl, beat the butter and honey in an electric mixer until light and fluffy
Mix in the flour mixture to form a dough
Wrap it in plastic wrap or waxed paper and refrigerate for at least one day
Open the dough (half at a time) into thin sheets
Cut out shapes using cookie cutters and place them on a baking sheet lined with parchment paper, leaving 2 cm between each cookie
Bake in a moderate oven (180°C) preheated for about 15 to 20 minutes, or until lightly golden
Remove from the oven and let cool
Decorate with glaze and candies
Store in airtight containers
