1 cup of seedless passion fruit
1/3 cup of honey
1/3 cup of orange juice
1 tablespoon of grated orange zest
1 tablespoon of butter
1/2 cup of butter or margarine
1 cup of all-purpose flour
2 eggs
1 teaspoon of vanilla extract
2 1/2 teaspoons of baking powder
1/2 teaspoon of salt
1 cup of seedless passion fruit

Mix the passion fruit, honey, orange juice, and grated zest in a saucepan
Cook over low heat for 5 minutes, stirring constantly
Add the butter, mix well, and let it cool
Beat the butter or margarine with the all-purpose flour
Add the eggs and vanilla extract
Mix together the flour, baking powder, and salt
Combine the mixture with the previous one and mix well
Refrigerate
Roll out thinly on a lightly floured surface
Cut into 5 cm thick slices
Place half of the slices in an ungreased baking dish
Cover with the passion fruit filling
Cut small circles from the remaining slice halves
Place them over the filling and seal the edges with a fork
Bake in a hot oven for 10 to 12 minutes
Make two batches of cookies.
