In a bowl, combine the yeast with the salt and warm water
Mix until dissolved
Add the coriander and enough oats to obtain a dough-like consistency
Grease a large baking sheet with butter
Place the dough on the baking sheet and spread it out thinly
Cover with a cloth and let rest in a protected area for 1 hour - this pause will help the biscuits become lighter
Place in a cold oven
Regulate the temperature to 120°F (soft heat) and bake for 15 minutes
Increase the temperature to 180°F (medium heat) and bake for an additional 20-25 minutes, or until dry and crispy
Remove from the oven and break into pieces
Yield about 30 biscuits.
