Combine 1 cup of warm milk with the yeast and 2 tablespoons of grated Parmesan cheese in a bowl
Mix well and let it rest, covered with a cloth, for 15 minutes
Beat the egg whites until snowy white
Add the egg yolks, salt, and remaining Parmesan cheese
Beat well and combine with the yeast mixture
Gradually add the remaining milk, melted butter, and flour, beating continuously with a wooden spoon until a smooth and elastic dough forms

Shape into small balls (about 1/2 cup) using greased hands and place on a baking sheet, leaving some space between each ball
