Make small cuts on the edges of each pork chop so they don't curl up after frying
Season with half of the lemon juice, pepper, and salt
Use the remaining lemon juice to keep the onion slices from browning

Heat a skillet over high heat with half of the butter
Add the pork chops and fry them until both sides are nicely browned
Add water, reduce heat, cover, and cook until the meat is tender
Add more water if needed

In another skillet, sauté the mushrooms and onion in the remaining butter for 2 minutes
Add honey and bourbon
As it simmers, stir and add the pork chops with the cooking broth
Cover and cook for 5 minutes.
