Season the steaks with pepper
Heat the olive oil
Let the steaks brown on both sides together with the chopped onion and pitted green olives
Add the broth
Simmer for about 1.5 hours
Add the tomatoes, peeled and chopped, 10 minutes before it's done
Check the seasoning and salt to taste
Remove the meat from the pan and thicken the remaining broth with sour cream mixed with wheat flour
Serve the meat with the sauce
Cut into 4 portions.
