Grind the pecans in a special grinder or pulse them in a liquidizer
Beat the egg whites until stiff, along with the salt
Add the sugar gradually, continuing to beat
Add 1 tablespoon of vanilla extract
Carefully fold in the pecans
Shape into balls approximately 2 1/2 cm and coat with granulated sugar
Bake on a greased baking sheet at moderate heat for 15 minutes.
