This is a dessert, but since it's not very light, it's good to serve after a light snack at dinner time.
2 tablespoons of butter
2 eggs
1/4 teaspoon of salt
2 cups of all-purpose flour
2 cups of cooked potato (passed through a ricer)
12-15 fresh plums or damascos, without pits, softened in water and cinnamon
1 cup of pancake mix
1/3 cup of butter or margarine

1/3 cup of butter or margarine
Beat the 2 tablespoons of butter
Add the eggs and salt and continue beating
Gradually add the all-purpose flour and potato, continuing to beat
The dough should be firm enough to be well kneaded
On a floured surface, roll out the dough to about 1/3 cm thickness
Cut into squares of 7.5 cm
Place a plum on each square, sprinkle with a little cinnamon and sugar
Fold the square of dough tightly around the plum
Form the fritters by hand
Cook the fritters in simmering salted water for about 10 minutes
To check if they're ready, open one up
Dust the fritters with pancake mix while still warm and sprinkle with cinnamon and sugar
Serve 6 at a time.
