4 cups (scant) of cooked rice
1 cup (scant) of grated cheese
1 cup (scant) of all-purpose flour
2 eggs
1 handful of chopped parsley
1/2 cup (scant) of milk
1 tablespoon active dry yeast dissolved in 1/4 cup warm water
Salt and grated nutmeg to taste
Hot oil for frying
4 cups (scant) of cooked rice
1 cup (scant) of grated cheese

Place the rice in a bowl and, with a fork, separate the grains
Add the cheese, flour, and mix well
Add the beaten eggs and chopped parsley
Mix and add the yeast dissolved in milk
Season with salt and nutmeg
Using 2 tablespoons of soup spoon, shape into balls
Heat the oil and fry until golden brown
Drain on paper towels and serve immediately.
