3/4 cup of raw rice
2 spoons of lemon juice

Cook the rice with boiling water and salt until it's well done
Drain
Season with lemon juice, lime rind, parsley, and salt
Cut the fish fillets into 4cm squares
Place the fish on a piece of absorbent paper in the center of each square and add 1/2 spoonful of rice
Make a little bundle with the paper and twirl it to form a ball, pressing well to shape it
Open the paper and remove the formed ball
Brush with olive oil and sprinkle with pumpkin seeds
Repeat the operation until all the rice is used up
Chill before serving
