Boil the potatoes with their skins on
When tender, peel them and mash them. Reserve
Cook the cod
Drain and remove any bones or skin
Beat the cod thoroughly with a clean, coarse cloth until it's completely shredded into strands
In a bowl, combine the mashed potatoes, cod, onion, and chopped parsley
Season with salt and black pepper
Add eggs one at a time, stirring the mixture until it reaches the ideal consistency
Shape the fritters with your hands or with the help of two soup spoons
Fry them in abundant hot oil
Note: The number of eggs needed depends on their size and quality as well as the type of potato used
