Stuffing
In a pan, heat the olive oil and cook the ground beef until it's well browned
Add the garlic, salt, black pepper, and green olives
Mix well and set aside to cool
Dough
Pass the potato through a ricer while still hot, add the egg, parsley, salt, Parmesan cheese, flour, and baking powder
Work the dough until it's smooth, cover with plastic wrap, and refrigerate for 20 minutes
Make medium-sized balls, shape them in your palm, and fill with the ground beef
Model into a ball, dip in the whipped egg white, and then coat with bread crumbs
Fry the meatballs in hot oil until they're golden brown
Place them on paper towels to drain excess grease
Serve with rice or as an appetizer.
