2 large sweet potatoes

1/4 cup (about 1/2 cup) grated cheddar cheese
1 tablespoon all-purpose flour

1 small onion, finely chopped

Boil the sweet potato with salt until it's very soft
Drain, and while still warm, mash it in a ricer
Next, drain the tuna well
In a bowl, mix together the mashed sweet potato, tuna, grated cheese, flour, egg, onion, paprika, and chili flakes
Shape the mixture into small patties and then coat them with breadcrumbs
Heat some oil and fry the fritters until they're golden brown
Remove, drain on paper towels, and serve immediately.
