Prepare ahead of time
Ingredients
1.2 kg of potatoes
2 eggs
2 tablespoons of wheat flour
2 teaspoons of salt
1 chopped onion
3 cloves of garlic, minced
1/4 cup of olive oil
500g of cod, see page 58)
1/2 teaspoon of sweet paprika (or coloring)
1/2 teaspoon of red pepper flakes
1 tablespoon of coriander
To fry
1 cup of wheat flour
2 beaten eggs
1 1/3 cups of cake flour
2 tablespoons of olive oil
Prepare ahead of time

Preparation

Cook the potatoes and squeeze out excess moisture
Add the eggs, flour, and salt, and mix well
Set aside

Sauté the onion and garlic in olive oil
Add the cod and paprika and cook for five minutes or until the fish flakes apart
Retire from heat and add the red pepper flakes and coriander, minced

Using a spoon, remove a portion of the reserved potato mixture and shape into a ball on a greased palm with olive oil
In the center, place some of the cod mixture and form a ball
Coat the balls in wheat flour, eggs, and finally cake flour
Fry in hot olive oil
Drain on paper towels
