8 medium potatoes
1/2 cup all-purpose flour

1 tablespoon finely chopped onion
2 tablespoons butter
1 slice of bread cut into small squares

Boil the potatoes without peeling until they are tender
Deseed and press through a potato ricer
Let it rest overnight, uncovered
Combine the flour, eggs, and salt; mix well
Fry the onion in butter
Add the bread cubes and fry them too
Hold a tablespoon of the mashed potatoes in your hand and place some bread cubes on top of it
Shape into a ball
Repeat the process until all the potato mixture has been used up
Place the dumplings in a large pot with boiling salted water
Cook without covering for 20 minutes or until they are done
Drain and serve immediately.
