Prepare 1 hour in advance
Melt 1/4 cup light water in a small pan over low heat, then sauté the onion until it's translucent and all the water has evaporated
In a medium bowl, mix together the ground beef, 1/4 cup chopped parsley, egg, garlic clove, oregano, salt, black pepper, breadcrumbs, milk, and cooked onion
Form medium-sized meatballs, taking care to grease your hands with olive oil so they don't stick
Heat a large non-stick skillet with some olive oil over medium heat
Cook the meatballs on all sides until they're browned
Remove from heat and place in a warmed serving dish
Wipe the skillet clean with lemon juice or vinegar, scraping up any browned bits from the bottom and sides of the pan
Pour the sauce over the meatballs
Once served, sprinkle with some chopped parsley
Serves approximately 6 people.
