2 medium carrots, peeled and grated
1 cup of fresh ricotta cheese
3 tablespoons of olive oil
2 egg whites
1 cup of whole wheat flour
1 teaspoon of oregano
1 tablespoon of chopped scallion
1 tablespoon of chopped parsley
Salt to taste
Black pepper to taste

In a blender, blend the carrots, ricotta cheese, and olive oil for 3 minutes
Add the egg whites and blend for another 5 minutes
Transfer the mixture to a bowl, add the flour, oregano, scallion, and parsley
Mix well, season with salt and black pepper
Shape the fritters, place them on a baking sheet lined with parchment paper, drizzle with olive oil
Bake in a preheated oven at 375°F for 40 minutes or until golden brown.
