In a blender, blend the carrots, ricotta, and olive oil for three minutes
Add the egg whites and blend for an additional five minutes
Transfer the mixture to a bowl, add the flour, oregano, scallions, and parsley
Mix well
Season with salt and black pepper to taste
Shape the fritters, place them on a greased and floured baking sheet, and bake in a medium preheated oven for 40 minutes or until golden brown.
