2 cups all-purpose flour

1 tablespoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup grated carrots
1/2 cup black raisins
3/4 cup milk
1/4 cup vegetable oil
1/3 cup honey

In a large bowl, mix together the flour, yeast, cinnamon, baking soda, and salt with a fork
Add in the grated carrots and raisins, set aside
In another bowl, combine the milk, oil, honey, and egg, then add to the dry ingredients and mix until a coarse texture forms
Divide between eight 5x9 cm mini muffin cups greased with butter and bake in a moderate oven (180°C) preheated for 20 minutes or until a toothpick inserted into the center of the mixture comes out clean
Let cool, remove from molds, and serve.
