32 medium shrimp, cleaned and with tails on
Salt to taste

3 cups of cornmeal
1/3 cup of water
1/3 cup of wheat flour
1/4 cup of oil
1 tablespoon of chopped parsley
1 tablespoon of lemon juice
2 tablespoons of salt
1 tablespoon of red pepper sauce
3 cloves of minced garlic
2 eggs
2 diced tomatoes
1 diced onion
For basting
1/4 cup of oil
1 tablespoon of coloring

Cut the shrimp in half, lengthwise, leaving them open
Season with salt and reserve
Corn Fritter

In a pan, heat the oil over medium heat
Add the onion, garlic, tomato, parsley, and red pepper sauce
Stir well
Cover and reduce heat

Cook for 10 minutes or until it starts to fall apart
Join the cornmeal and wheat flour
Mix well

In a pan, mix the water with lemon juice
Add it to the pan and stir well
Add the eggs and mix quickly to get a consistent dough

With the help of a spoon, shape the dough into oval balls
Place an open shrimp on top of each ball and press gently

In a steam pan, boil three cups of water over high heat
Cook the fritters in the top portion of the pan for 10 minutes or until the shrimp is tender

In a pan, mix the oil with coloring until dissolved
Baste the fritters and serve.
